Andrew Cisneros has long since proved himself a key player in St. Louis' food scene, from his award-winning Peruvian bistro Jalea to the fast-casual Sanguchitos by Brasas stall inside Perennial Artisan Ales. Cisneros' newest restaurant is a look back at the concept that started it all, before Jalea was a twinkle in his eye: Brasas. The Peruvian rotisserie chicken shop will open its first brick-and-mortar location on the Delmar Loop in spring 2024.

Cisneros has been working on the Brasas brand for about four years, and it took a lot of patience to find the right spot for its permanent space. “I want to be able to focus on the chicken and continue the same quality we put out at Jalea,” he says. “When we came across this space, we didn’t even have to think twice. It was perfect.” The building’s small bar area, separate room for seating and sizable kitchen checked all the boxes. Now that they’ve picked up the keys, it’s time to get to work on cosmetic renovations; Cisneros and his wife’s recent Europe trip will inspire the interior design. “We went to Lille, France, and visited a lot of gastropubs – they’re very contemporary and cozy,” he says. “We’re going to try to take influences from not just France, but also London and other places and put it all together.”
